Viognier grapes from the Cornerstone Vineyard in Hawkes Bays Gimblett Gravels are hand harvested and individually laid on a bed of straw gently dehydrated for a full 28 day moon cycle. A natural concentration of sugars, flavours and acidity occurs as the volume decreases.

Slowly whole bunch pressed and left for a long slow ferment with indigenous yeast until finally ending the fermentation on its own.
