2021 Deep Down Sauvignon Blanc

Most Marlborough Sauv is actually pretty damn good for the price. A $15 Savvy B at the supermarket will get you further quality wise than (IMHO) any other variety.  Making sauv as we know it, that steely pungent grassy tropical vibe, is pretty hard to mess up. Sure, some of the big names manipulate these ‘bread and butter’ wines to taste as similar as possible to the previous vintage, but there is another dimension to Sauvignon Blanc (pronounced- saw vee nyon blahnk) when made the way mates Clive and Peter have for the last 3 years since launching Deep Down.  The newly released 2021 is more concentrated and unashamedly [to me] more ‘saveey’y’ (?) than last year. Their signature is the use of a wild yeast fermentation. 99.99% of the wine industry use packet yeast, If you want passionfruit, use this yeast. Grapefruit, oh you’ll have to use this one. Wild yeast speaks of authenticity, and makes wine that expresses the character of its site. This is one of several differences between $15 and $40 sauv, also take note of the balance and length, unmistakable Sav, but “with the volume turned down”. You get what you pay for.
